King prawns marinated in lemon, piri piri mix and salt. Grilled and served in a soft shell tacos along with avocado salsa and a simple cabbage carrot salad. A hearty and delicious meal.
Piri Piri Prawns:
250 gms King Prawns - Shells removed, cleaned and deveined
Juice of 2 limes
Salt to taste
Siri Piri spice mix - 1.5 tbsp or more if needed
Marinate the prawns in the above spices and leave for 10 minutes. Heat up a grill pan and grill the prawns, 2 minutes each side until pink. Do not overcook the prawns because they will become chewy.
Toss the prawns in butter once done to add extra flavour.
If you do not have piri piri spice mix you can use a spice mix of your choice. Chill flakes work just as well.
Onion - 1/2 chopped fine
Garlic - 2 pods, chopped fine
Tomato - 1, deseeded and chopped fine
Lime juice - 1 tbsp
Coriander leaves - 2 tbsp, chopped fine
Green chili or jalapeño - 1, chopped fine with seeds removed
Avocado - 1, chopped into chunks
Salt to taste
Mix the onion, tomato, garlic, green chile, and avocado in a large mixing bowl. Finish it up with lemon juice and coriander leaves. Finally, add salt to taste and give it one final toss. Chill until ready to serve.
Cabbage Carrot salad with lemon coriander dressing
Cabbage - 1/2 small cabbage, sliced fine
Carrots - 1, sliced into juveniles
Spring onions - 1, sliced fine
Sour cream - 1/2 cup
Extra virgin olive oil - 1 tbsp
Garlic - 1 pod
coriander leaves - 2 tbsp
salt to taste
cayenne pepper - 1 tsp (optional)
Blend the sour cream, garlic and coriander leaves into a smooth paste in a blender. Add a tbsp of water to loosen up the dressing. Now add salt and cayenne pepper to the dressing.
Drizzle the dressing over the salad ingredients and toss the salad well so that the cabbage weighs down a bit and resembles a cole slaw.
To serve, warm up soft shell tacos in an oven at 200 C for 10 minutes. Remember to wrap them up in aluminium foil before you add them to the oven.
Now layer the prawns in the tacos followed by salad and salsa.
You can also used tortillas or hard shell tacos if you prefer. Enjoy guys!!
